Barbie’s Fabulous Frittata Thinly slice Back Acres Potatoes (enough to cover the bottom of a 12” ovenproof skillet Fry in a mix of Back Acres unsalted Butter and Olive Oil (about 1 Tbls. Each) Add chopped chives (Cassandra Farms) Salt and Pepper to taste In a bowl, scramble 8 eggs (again, Back Acres has these!) Scramble with a small amount of milk or ½ and ½ Salt & Pepper to taste Add eggs to skillet on top of fried potatoes and chives Add a small handful of spinach Add ½ cup shredded Ohio Farm Direct Swiss Cheese When the eggs begin to set, sprinkle with paprika, then pop in the oven under the broiler and cook until eggs are fully set.
